| Physical and Chemical Properties | There are six isomers of methyl ionone, which can be industrially produced by α-N-methyl ionone, α-isomethyl ionone, β-N-methyl ionone and β-isomethyl ionone. Commercial products are mixtures of α-and β-bodies. The product exists in three isomeric forms, similar to the situation with ionone, which is naturally present in the essential oil obtained from the root of iris, which contains about 75% of gamma-Iris ketone, 25% alpha-Iris ketone and trace amounts of beta-Iris ketone. The Iris ketone used for flavoring in industrial production is a mixture of α-and β. Iris ketone is a colorless liquid. Boiling point 10.9(0.4kPa), relative density 0.9358(20/4 degrees C), refractive index 1.5013. Soluble paraffin oil, dipropylene glycol, ethanol, insoluble in water. There is a fragrance of the root of the iris. |

| Production method | Made from dimethyl butylene and isoprene. Dimethyl butadiene is subjected to a hydrochlorination reaction to produce dimethyl butadiene hydroxide, which is then polymerized with isoprene to obtain methyl geranyl chloride. Methyl geranyl chloride reacts with urotropine to obtain 6-methylcitral, and then condensed with acetone in an alkaline medium, and then cyclized to obtain irone. Methyl violet ketone is synthesized by a method completely similar to that of violet ketone. It is obtained by condensation of citral or a mixture containing citral with butanone to form pseudoisomethyl violet ketone, which is then cyclized and isomerized at the same time. |
